Have you ever wanted to explore to world of Mexican cookery but don’t know where to begin? Then this is the course for you.
During five hands-on sessions you’ll learn about the building blocks of Mexican inspired food from spice blends to sauces and breads. Don’t worry about the heat, you will find out how to adjust the spice levels to suit your own taste and focus on the development of simple ingredients into restaurant worthy meals.
Before you know it you’ll have created beautiful burritos, enticing enchiladas and super salsas, with lots of ideas for different combinations.
Where possible we will use ingredients from regular supermarkets and local shops so your meals will be budget friendly too.
All demonstrated dishes will be plant based, however there will be the option for you to add meat to many of the things you make, if you’d like to.
No prior knowledge is needed for this course, you’ll be supported every step of the way.
As well as learning about ingredients and recipes specific to Mexican cookery you’ll also learn about fundamentals of cooking that can be applied to almost any cuisine, such as how to prepare yourself and your ingredients to make cooking stress-free, how and when to apply heat and how to adjust recipes to suit your taste and the available ingredients.
What will learners achieve by the end of the course?
Make a range of sauces and dips
Make a chilli, using what’s on hand and varying the spice level to suit
Make cornbread using a range of extra ingredients for variety
Make their own chilli powder to suit heat preferences
Assemble ingredients in a variety of ways to make use of basic dishes
What you will need to bring to the course:
A week before the course begins you will receive an email outlining what we will be making during the first session and what ingredients and containers you need to bring. Wherever possible ingredients will be available from supermarkets such as Aldi or Lidl to keep costs as low as possible.
If you receive certain benefits you will be offered the course for free, however if you have a financial barrier which may prevent you from enrolling on the course, please visit our funding page for further information.
Residency in England
To book and enrol on one of our courses, you must be living in England permanently and live outside of the devolved areas listed below or live within the East Midlands Combined County Authority (EMCCA) devolved area (Nottinghamshire, Derbyshire).

Residency Eligibility – other criteria
If you are living in the UK on a visa we will require evidence of this in order to be funded for the course, you can upload this evidence when you apply for the course. (completion of a questionnaire will be required).
Some exceptions may apply for example
Your visa expiry date must be beyond the end of your course
Asylum seekers must have lived in the UK for 6 months or longer while their claim is being considered by the Home Office
You are receiving local authority support under section 23C or section 23CA of the Children Act 1989 or the Care Act 2014
Any learner who is not funded full cost fees would apply to these courses.
