About this course

You will learn how to prepare and present four side dishes popular throughout the Caribbean. These side dishes (tapas) are usually served during small get togethers (limes) with friends and families. You will also be exposed to the culture, music and traditions of life in the Caribbean. Four stand alone dishes merging different cuisines from the international diaspora of the West Indies including: African, Chinese, Indian and European influences.

Over the four weeks we will plan, prepare, cook and present 4 dishes: Jerk Chicken Wings; Accra (fish pakora) & Plantains, Coconut Shrimp and salsa. Egg Plant fitters, What will learners achieve by the end of the course? Apply food safety and nutrition principles in planning and preparations of food Plan and prepare ingredients for four popular side dishes Cook four West Indian side dishes Present and Serve a the side dishes with traditional drinks

What you will need to bring to the course:

Seasoning/marinade: coriander, cumin, curry powder, salt, spring onions, garlic, onions & tomato, turmeric.

Main Ingredients: 1/2 kg shrimp, 1 kg chicken wings/thighs, 1 egg plant, tempura mix, 1 plantain, 250g salt fish, salsa ingredients.

Residency in England

To book and enrol on one of our courses, you must be living in England permanently and live outside of the devolved areas listed below or live within the East Midlands Combined County Authority (EMCCA) devolved area (Nottinghamshire, Derbyshire).

Residency Eligibility – other criteria

If you are living in the UK on a visa we will require evidence of this in order to be funded for the course, you can upload this evidence when you apply for the course. (completion of a questionnaire will be required).

Some exceptions may apply for example

  • Your visa expiry date must be beyond the end of your course

  • Asylum seekers must have lived in the UK for 6 months or longer while their claim is being considered by the Home Office

  • You are receiving local authority support under section 23C or section 23CA of the Children Act 1989 or the Care Act 2014

Any learner who is not funded full cost fees would apply to these courses.
