About this course

You will learn how to prepare and present four side dishes popular throughout the Caribbean. These side dishes (tapas) are usually served during small get togethers (limes) with friends and families. You will also be exposed to the culture, music and traditions of life in the Caribbean. Four stand alone dishes merging different cuisines from the international diaspora of the West Indies including: African, Chinese, Indian and European influences. Over the four weeks we will plan, prepare, cook and present 4 dishes: Jerk Chicken Wings; Accra (fish pakora) & Plantains, Coconut Shrimp and salsa. Apply food safety and nutrition principles in planning and preparations of food Plan and prepare ingredients for four popular side dishes Cook four West Indian side dishes Present and Serve a the side dishes with traditional drinks
