About this course
You will learn how to prepare and present four side dishes popular throughout the Caribbean. These side dishes (tapas) are usually served during small get togethers (limes) with friends and families. You will also be exposed to the culture, music and traditions of life in the Caribbean.
Four stand alone dishes merging different cuisines from the international diaspora of the West Indies including: African, Chinese, Indian and European influences. Over the four weeks we will plan, prepare, cook and present 4 dishes: Jerk Chicken Wings; Accra (fish pakora) & Plantains, Coconut Shrimp and salsa. Egg Plant fitters,

Apply food safety and nutrition principles in planning and preparations of food
Plan and prepare ingredients for four popular side dishes
Cook four West Indian side dishes
Present and Serve a the side dishes with traditional drinks

To enrol on one of our courses, you must have been living in England and have been resident in the UK for the past 3 years.
Some exceptions may apply if you are living in England with evidence of the right to remain and are from an EEU EEAU country (completion of a questionnaire will be required). As we no longer receive funding for our ESFA funded courses for learners living in the devolved areas listed below, full cost fees would apply to these courses if you live in these areas:
